Triple Protein Chopped Salad Recipe
Preparation Time: 10 minutes | Total Time: 25 minutes
Ingredients:
- 2 cups canned cannellini beans, drained and rinsed
- 1 package veggie grounds
- 1/3 cup almonds, chopped
- 1/4 cup hemp seeds
- 1 red onion, diced
- 1/2 cup parsley, chopped
- 1/4 cup rice vinegar
- 2 tbsp olive oil
- 2 tsp maple syrup
- 1 tbsp chili flakes
- 1/2 tsp salt
Instructions:
- Preheat the oven to 350°F and line a baking tray with parchment paper.
- Spread veggie grounds on the tray and bake for 10-15 minutes or until browned. Set aside.
- Drain and rinse beans, add to a large mixing bowl.
- In the mixing bowl, add cooked grounds, almonds, hemp seeds, red onions, and parsley.
- In a small bowl, whisk together rice vinegar, olive oil, maple syrup, chili flakes, and salt.
- Pour dressing over the salad and toss well.
- Plate the salad into 4 eco-friendly Greendish containers, seal, and refrigerate until ready to eat.
