Protein Fusion Feast: Triple Power Salad

Triple Protein Chopped Salad Recipe

Preparation Time: 10 minutes | Total Time: 25 minutes


  • 2 cups canned cannellini beans, drained and rinsed
  • 1 package veggie grounds
  • 1/3 cup almonds, chopped
  • 1/4 cup hemp seeds
  • 1 red onion, diced
  • 1/2 cup parsley, chopped
  • 1/4 cup rice vinegar
  • 2 tbsp olive oil
  • 2 tsp maple syrup
  • 1 tbsp chili flakes
  • 1/2 tsp salt


                      • Preheat the oven to 350°F and line a baking tray with parchment paper.
                      • Spread veggie grounds on the tray and bake for 10-15 minutes or until browned. Set aside.
                      • Drain and rinse beans, add to a large mixing bowl.
                      • In the mixing bowl, add cooked grounds, almonds, hemp seeds, red onions, and parsley.
                      • In a small bowl, whisk together rice vinegar, olive oil, maple syrup, chili flakes, and salt.
                      • Pour dressing over the salad and toss well.
                      • Plate the salad into 4 eco-friendly Greendish containers, seal, and refrigerate until ready to eat.
