Gingerbread Protein Power Pancakes Recipe
Preparation Time: 10 minutes | Total Time: 25 minutes
Ingredients:
- 1 cup oats
- 2 tablespoons chia seeds
- 1 tablespoon hemp seeds
- 1/4 cup unsweetened applesauce
- 1 cup unsweetened plant milk
- 1 tablespoon aluminum-free baking powder
- 1 tablespoon molasses
- 1 scoop protein powder of choice (optional)
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon vanilla
- 1/4 cup water (more as needed)
- Cooking spray
Instructions:
- Add all ingredients to a high-speed blender and let sit for a few minutes.
- Blend, adding water as needed, to reach a smooth, spreadable consistency.
- Cook spoonfuls of batter one or two at a time on a skillet lightly coated with cooking spray over medium-low heat. Note: These are not traditional light and fluffy pancakes. Cook slowly, approximately 2 minutes or more each side on lower heat until cooked through.
- Serve these protein-rich Gingerbread Pancakes in eco-friendly Greendish bowls, plates, and with their cutlery. Embrace the warmth of the season with a hearty and spiced breakfast!
