Gingerbread Protein Power Pancakes Recipe

  • 1 cup oats
  • 2 tablespoons chia seeds
  • 1 tablespoon hemp seeds
  • 1/4 cup unsweetened applesauce
  • 1 cup unsweetened plant milk
  • 1 tablespoon aluminum-free baking powder
  • 1 tablespoon molasses
  • 1 scoop protein powder of choice (optional)
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla
  • 1/4 cup water (more as needed)
  • Cooking spray


  • Add all ingredients to a high-speed blender and let sit for a few minutes.
  • Blend, adding water as needed, to reach a smooth, spreadable consistency.
  • Cook spoonfuls of batter one or two at a time on a skillet lightly coated with cooking spray over medium-low heat. Note: These are not traditional light and fluffy pancakes. Cook slowly, approximately 2 minutes or more each side on lower heat until cooked through.
  • Serve these protein-rich Gingerbread Pancakes in eco-friendly Greendish bowls, plates, and with their cutlery. Embrace the warmth of the season with a hearty and spiced breakfast!
