Savor the Fusion: Pesto Grilled Cheese & Tomato Soup Extravaganza

Pesto Grilled Cheese & Tomato Soup Recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes | Total Time: 45 minutes

Ingredients:

  • Tomato Soup
    • 1 can (28 oz) diced tomatoes
    • 3 tbsp olive oil
    • 1/2 onion, roughly chopped
    • 4 garlic cloves, roughly chopped
    • 2 cups vegetable broth
    • 1 tsp sugar
    • 1 tsp dried basil
    • 1 tsp dried oregano
    • 1/2 cup milk
    • Salt to taste
  • Parmesan-Crusted Pesto Grilled Cheese

    • 2 slices sourdough bread
    • Shredded Parmesan cheese
    • Butter
    • Pesto
    • Sliced cheddar cheese

Instructions:

  • Heat 3 tbsp olive oil in a pot over medium-low heat.
  • Add roughly chopped onions, sauté for 5-7 minutes.
  • Add roughly chopped garlic, sauté for an additional 1-2 minutes.
  • Stir in 2 cups vegetable broth, canned tomatoes, 1 tsp sugar, 1 tsp dried basil, 1 tsp dried oregano.
  • Bring to a boil, cover, and reduce to medium-low heat, simmer for at least 20 minutes.
  • Use an immersion blender to blend until smooth.
  • Stir in 1/2 cup milk. Add salt to taste.
  • Spread butter on one side of 2 slices of sourdough bread.
  • Press shredded Parmesan onto the buttered side.
  • Flip the bread and spread a generous layer of pesto on both slices.
  • Add a layer of sliced cheddar cheese.
  • Close the sandwich and place it on a skillet over medium heat.
  • Once one side has browned, flip and brown the other side until the cheese is melted.
  • Remove from heat and serve with the tomato soup.
