Pesto Grilled Cheese & Tomato Soup Recipe
Preparation Time: 15 minutes | Cooking Time: 30 minutes | Total Time: 45 minutes
Ingredients:
- Tomato Soup
- 1 can (28 oz) diced tomatoes
- 3 tbsp olive oil
- 1/2 onion, roughly chopped
- 4 garlic cloves, roughly chopped
- 2 cups vegetable broth
- 1 tsp sugar
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 cup milk
- Salt to taste

Parmesan-Crusted Pesto Grilled Cheese
- 2 slices sourdough bread
- Shredded Parmesan cheese
- Butter
- Pesto
- Sliced cheddar cheese
Instructions:
- Heat 3 tbsp olive oil in a pot over medium-low heat.
- Add roughly chopped onions, sauté for 5-7 minutes.
- Add roughly chopped garlic, sauté for an additional 1-2 minutes.
- Stir in 2 cups vegetable broth, canned tomatoes, 1 tsp sugar, 1 tsp dried basil, 1 tsp dried oregano.
- Bring to a boil, cover, and reduce to medium-low heat, simmer for at least 20 minutes.
- Use an immersion blender to blend until smooth.
- Stir in 1/2 cup milk. Add salt to taste.
- Spread butter on one side of 2 slices of sourdough bread.
- Press shredded Parmesan onto the buttered side.
- Flip the bread and spread a generous layer of pesto on both slices.
- Add a layer of sliced cheddar cheese.
- Close the sandwich and place it on a skillet over medium heat.
- Once one side has browned, flip and brown the other side until the cheese is melted.
- Remove from heat and serve with the tomato soup.
